VINIFICATION: Manual harvesting at perfect maturity – this ancestral method gives very fruity wines from local grape. Different from Champagne method, The traditional Gaillacoise Method is done according to natural process, without any sugar adding and without any “dosage”; we only use local grapes which, during all the process time, will assure the first fermentation time, the bubbles creation and then residual sugar in the bottle. Fermentation takes place into bottles and is lasting 3 months; then, we conserve the wines on lees during 6 other months before disgorging
TASTING NOTES: Persistent bubbles, flavoured and fresh mouth bubbles. Wine is long, well-balanced and fruity. Pale yellow coloured with green tints, wine is brilliant and limpid. Nose is very delicately fruity and flowered, mouth is fresh and aromas are persistant.
